An easy summer appetizer any girl can whip up -- no Martha Stewart skills required!
Feel like if you take another bite of boring potato salad, you're gonna scream? Yeah, BBQ burn-out happens to the best of us. But if you're throwing a summer soiree and want to break free from the same old/same old, feast your gorgeous eyes on this! Compliments of Carmine's, the famous family-style Italian eatery, here's a really simple recipe that's bound to wow your hungry guests: Roasted Peppers, Anchovies and Fresh Mozzarella. Buon appetito!
Roasted Peppers, Anchovies and Fresh Mozzarella
4 large red peppers
8 ounces fresh Bocachino mozzarella
Marinade for cheese:
1 ounce olive oil
1 teaspoon chopped fresh garlic
1 tablespoon chopped fresh parsley leaves
1 teaspoon fresh diced red pepper
1 pinch salt
1 pinch ground black pepper
4 slices anchovy (optional)
4 leaves fresh basil cut into thin strips
Place red peppers either over high grill flame or in preheated oven 450º for about 8-10 minutes or until burnt all the way around. Remove from heat and place in covered bowl or paper bag for about 10 minutes. Remove peppers and remove all seeds and charred skin. Place peppers in bowl with 1 ounce olive oil, pinch dry oregano, 1 tsp. chopped garlic, 1 tbsp. chopped parsley and a pinch of salt and pepper.
Marinate for at least 1 hour.
Lay out peppers flat on serving plate and include some of the marinade. Take halves of fresh mozzarella and place around peppers. Lay anchovies over peppers and mozzarella. Sprinkle with fresh basil strips.
And voila, your guests have yummy eats to nosh on -- and you look oh-so-impressive. Buon appetito!
