Fierce Fried Apple Pie
1 cup dark corn syrup
1 cup light brown sugar
10 Jazz or Braeburn apples, peeled, cored, and sliced
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 teaspoon cornstarch
1 teaspoon freshly grated orange zest
1 teaspoon freshly grated lemon zest
2 tablespoons unsalted butter, at room temperature
One package refrigerated 2-crust piecrust
1 large egg
1/2 tablespoon milk
1. Preheat the oven to 325 degrees F
2. Lightly coat a 9-inch glass pie plate with vegetable oil. Set aside.
3. Combine the corn syrup and 3/4 cup of brown sugar in nonstick saucepan over medium heat. Cook, stirring constantly, until the sugar has melted into the syrup, taking care that the mixture does not burn.
4. Stir in the apples. When blended, add 1 tablespoon each of cinnamon and nutmeg, cornstarch, orange and lemon zests and the salt, stirring constantly to incorporate the dry ingredients. Cook, stirring occasionally, for about 6 minutes or until bubbling. Stir in the butter and remove from the heat. Set
aside to cool before filling the pastry.
5. Place one of the pastry circles into the oiled pie plate.
6. Combine the remaining 1/4 cup of brown sugar with the remaining 1/2 teaspoon of cinnamon and nutmeg, stirring to blend. Set aside.
7. Using slotted spoon transfer the cooled apple mixture to the pie plate, allowing excess liquid to drain off before placing the apples into the pastry. Mound the apples in the center. The apples should generously fill
the pastry.
8. Cover with the remaining pastry circle, pressing the edges together. Using your thumb and index finger, crimp the two pieces of pastry together to make a decorative edge.
9. Combine the egg and milk in a small mixing bowl, whisking with a fork to blend.
10. Using pastry brush, lightly coat the top crust with he egg wash. Sprinkle the reserved brown sugar/spice mixture over the top of the pastry.
11. Place in the preheated oven and bake for about 35 minutes or until the crust is golden brown.
12. Remove from the oven and let cool for a few minutes before serving.
